Bhindi Sambhariya Recipe | Gujarati Style Stuffed Okra Recipe|bharwan bhindi

A delicious mouth watering and tasty recipe from the state of gujarat.

Bhindi Sambhariya is an easy Gujarati style stuffed ladys finger recipe.Tender ladies fingers stuffed with coconut, coriander leaves,peanut powder and other spices make this traditional Gujarati dish a favourite.

Try once and you will surely love it as a bhindi non lover like me has started eating bhindi after tasting this recipe

12-15 tender okra/bhindi/ladysfinger/bhendi

1 tbsp oil

1/4 tsp hing/asafoetida

1 tsp cumin seeds (jeera) +1 tsp mustard seeds ( rai)

few curry leaves 

For stuffing:

1 1/2 tsps ginger green chili paste

1/2 tbsp roasted coriander powder

1 tsp roasted cumin powder

pinch garam masala powder

1/2 tbsp white sesame seeds

3-4 tbsps fresh coriander leaves, finely chopped

3 tbsps fresh coconut, grated

2 tsps  sugar or jaggery 

2 tbsps coarsely powdered peanuts (shengdana koot)

1 tsp Sugar

1/2 tbsp oil

salt to taste


1 Wash and pat bhindi dry with towel.let bhindi dry completely Make a slit length wise in each bhindi .

2.Mix all the ingredients meant for stuffing in a bowl.  stuff bhindi with stuffing . Stuff all the bhindi and keep aside.

3 Heat the oil in a pan and add the cumin seeds,rai. When they crackle, add the asafoetida,curry leaves .Add the stuffed bhindi pieces and salt .

4. take care to arrange stuffed ladysfinger in a single layer. Add any left over stuffing and cook on low medium flame without lid.Turn the ladys finger after every 3 minutes  to allow even cooking on all sides. 

5.Turn off heat. Serve with rice or roti.
