Homemade fresh cream |How to make fresh cream from milk

Fresh cream is one ingredient which most of you might have read while making various exquisite recipes especially punjabi dishes & few desserts.

Normally we buy it from outside.i used to bring amul fresh cream pack earlier .But we can make it easily at home if we put little effort.

Milk is one thing which every household buys & is heated first thing in morning as we make our cup of tea (exceptions being those whoi drink green tea)

1.Heat milk and once it is boiled switch off gas.keep it in fridge for 1 hour or 2-3 hours .after few hours you will find that thick malai has got collected on the top. 

2.Remove the malai with a spoon and collect it in a clean container else you can use a strainer to take the malai.  malai will depends on  type of milk  ie full cream or fat free

3.Keep collecting the malai in the same container everyday when you boil the milk and keep in freezer. I usually collect the malai twice  a day. 
Keep refrigerated and let it rest  for minimum 1 day for your instant cream say if you need just few tbsps.Just whisk it well and Your cream is ready to use. 

For bulk quantity  keep collecting for atleast 20-30 days or till you think you have a fair amount of malai collected.

4. Just whisk it well using a hand whisk for few mins until its creamy without any lumps.You can also use a electric whisk to beat it.Your cream is ready for use.

5. your batch of homemade fresh cream is ready to use .

This cream suits well for almost all savoury gravies/dishes which calls for fresh cream. Most of the gravies I posted here uses homemade fresh cream only.
Homemade freshcream is not suitable for any sweets/desserts like cheese cake etc. As it has a sour taste, it will not be suitable for desserts/sweets.
